Champignon Cremieur with lemon salad
Recipe for 4 Portions:2 Champignon Cremieur (At room temperature)
Olive oil(or nut oil)
Salt and pepper
Castor sugar to taste
2 spring onions
Preparation:Generously peel and segment the lemons. Collect the juice separately and place the segments in a small bowl. Add 1 tsp balsamic vinegar and 2 tbsp oil and mix well. Season with salt, pepper and castor sugar. If necessary, use the lemon juice to balance the flavour.
Cut the spring onions into small rings, add to the mixture and mix together. Place on a plate. Cut the Champignon Cremieur into segments and arrange in a fan shape. Serve with plenty of fresh, warm white bread.
Alternative:At the end, add a little finely chopped basil to the lemon salad.
