Champignon Cremieur with red wine shallots

Recipe for 4 Portions:

1 Champignon Cremieur
250 ml red wine
200g small shallots
1 organic orange
3 tbsp sugar
1 tsp rosemary


Wash the orange, grate a tablespoon of the peel and press the juice. Peel the shallots. Boil 3 tbsp sugar with 1 tbsp water in a small pan until the sugar caramelises to a light brown colour. Add the rosemary and deglaze with the orange juice. Add the shallots and grated orange peel. Season with salt and pepper.
Cook covered for 30 minutes over a low heat. Slowly add the red wine while stirring. The shallots should not be completely covered. If necessary, add some more water and taste. Finally sprinkle with parsley.

Divide the warm red wine shallots on four plates. Cut Champignon Cremieur into segments and arrange with the shallots.
