CAMBOZOLA Pancetta Sandwich

for about 4:

1 baguette
1 wedge of CAMBOZOLA
1 bunch fresh basil leaves
10 slices Pancetta
1 cup olive oil, divided


Preheat oven to 400°F. Bake Pancetta for 7 minutes on a parchment lined baking sheet. In the meantime pour a thin layer of olive oil in a small skillet heated to medium-high heat. Fry basil leaves until crisp, about 5 seconds per side and set aside on a paper towel lined plate. Heat grill pan to med-high. Slice baguette in half. Brush the inside of the baguette with olive oil. Grill for 4 minutes until bread is golden and grill marks show. Top grilled baguette slices with crispy basil, sliced Cambozola and baked Pancetta slices.
